Zucchini Risotto, Parmesan and CBD

 Ingredients for 4 persons :

Risotto 400 g
Zucchini 400 g
Rocket A big handful
Parsley ½ bouquet
Onion 1
Whole parmesan 60 g
White wine 2 cl
Poultry broth 1.2 liters
Olive oil  200 ml
Salt A pinch
Pepper A pinch
CBD (Flowers or Trim) 5 g 

 

CBD oil preparation

In order to benefit from all the benefits of CBD, we explain how to prepare an olive oil infused with CBD. You can obviously replace olive oil with rapeseed oil, coconut oil, or whatever else you want to use. Regarding the oil / CBD ratios, there is no real right or wrong, it depends on your tastes. In addition, if you prepare 200ml of CBD oil you will have some in reserve for other recipes! It keeps very well! 

Step 1

Rfill a saucepan halfway with water and heat it low heat.

2nd step

Vpour the olive oil into the pan and add your cannabis.

Step 3

Using a wooden spatula, stir everything.

Step 4

Lcook the pan over very low heat for an hour and stir from time to time the contents. ATabout 60 minutes, remove the pan from the heat and let cool.

Step 5

When the contents are cold, put the pan in the refrigerator and let cool until the oil solidifies.. You can then separate it from the water without any problem, since the latter will remain liquid.

Step 6

Lhen you have separated the oil, let stand out of the refrigerator at room temperature, so that it regains its liquid state.

 

Risotto preparation

Step 1

Finely slice the zucchini lengthwise and cook them in the pre-prepared CBD olive oil in a skillet for five minutes over medium heat.

2nd step

Finely chop the leaves of flat-leaf parsley and the arugula then add them to the pan once the zucchini are ready. Salt and pepper then remove from heat.

Step 3

Heat 5 ml of CBD olive oil, add the finely chopped onion without letting it color. Add the rice and stir until it is translucent.

Step 4

Pour in the white wine and cook until the rice has completely absorbed it. Cover the rice with broth and cook for 20min, stirring regularly. The rice should be creamy and the grains should no longer be crunchy

Step 5

Add the zucchini with the arugula and parsley five minutes before the end of the preparation.

Step 6

Remove from the heat and add the Parmesan cut into thin slices just before serving.
